Eggs boiled hard, cooled and peeled. Each one halved, the yolks dropped into a bowl and the whites set out on a plate
Building the filling
Everything for the filling comes out: mayonnaise, mustard, garlic, paprika, cayenne and salt. Garlic minced fine and a lemon halved
Mashed with spring onion
The yolks get mashed smooth with the mayonnaise, mustard, lemon and spices, and sliced spring onion folded through
Filled and finished
Spooned back into the whites, then dusted with paprika and salt
Served
Onto the table, paprika and salt on top
