Fluffy pancakes which satisfy even the hungriest breakfasters. Maple syrup required.

Pancakes

Pancakes recipe with metric measurements. Ingredients include flour, sugar, baking powder, baking soda, salt, milk, eggs, and fat (butter or oil). Steps: mix dry, mix wet, combine briefly, rest, cook on a hot pan until browned.

Ingredients

  • Flour — 290 g
  • Sugar — 60 g
  • Baking powder — 19.2 g
  • Baking soda — 1.25 g
  • Salt — 3 g
  • Milk — 455 g
  • Eggs — 1
  • Butter — 60 g
  • Optional: vanilla — 2 tsp

Method

  1. Whisk all dry ingredients until evenly combined.
  2. Whisk all wet ingredients in a separate bowl.
  3. Pour wet into dry and fold just until no dry pockets remain. Do not overmix.
  4. Rest the batter 5–10 minutes.
  5. Heat a pan over medium heat. Lightly grease. Cook pancakes until bubbles form and edges set, then flip and cook until browned.
  6. Serve immediately, or hold warm in a low oven.
